In both cases, do both tatas at the same time (i mean, unless you are sculpting a cancer survivor or an Amazon archer) so they come out relatively even. Note that almost no real human being is actually symmetrical; your idealized image of the form will vary by your needs.
“Feminine” breasts: Make teardrop shaped bulbs with your chosen media (clay, apoxie, sculpey, whatever) of equal size. Set them in place (eliminating seam lines as you go with a precise smoothing tool). Run two fingers from the shoulder blade area down in an outward sweeping motion - as if your fingers are skiing - angling towards the largest part of the bulb. Pinch and twist a tiny bit at the “jump” point in your slope. Smooth with tools. (For four-breasted alien chicks, just double your titties)
Man boobs: Make two pieces of equally sized “toast” proportionate to your existing figure out of clay (or media of your choice, as above). Smash under shoulder blade area with fingers, smoothing to desired level of musculature or flab.
Disturbing saggy wolf tits: 4-6 tiny pyramids. Space appropriately.
Moo cow udders: Make 4 of the teardrop shape as above but with the bulb much smaller and the “neck” longer.
